Our flours are all stone milled which preserves the integrity and nutritional value of the grain.
Bolted flour has been sifted to remove a large portion of the bran, but still retains the nutrient dense germ and starch filled endosperm. You will also notice very fine bran particles, full of fiber, which give the flour a light cream color.
Turkey Red is a heritage variety of wheat that was widely grown in the Upper Midwest a century ago. Our current Turkey Red grain comes from a farmer in Jefferson Iowa, Scott Shriver. His farm has been Certified Organic since 2008, and we know him as a fellow member of the Practical Farmers of Iowa. We are excited to be able to provide a market to Scott for his grain, and to be able to share this flour with you.
Our All Purpose Flour works well for everything including cakes and cookies, biscuits, waffles, and breads.
Our Bolted Pastry Flour is a silky, soft flour made from Soft White Winter Wheat. It is perfect for biscuits, pie crusts, cookies, and more.
